Be kind and please don’t judge me. But, I have sent my children to school with nothing more than a toaster waffle wrapped in a paper towel for breakfast. I am not proud. And it certainly won’t win me any parenting awards. In fact, I am actually ashamed to admit that this chef sends his kids off in the morning with nothing more than a frozen disc of processed dough for sustenance. However, mornings can be difficult. School day mornings can be more difficult. School day mornings when your spouse is away on business can be down-right impossible.
But as they say, acknowledging that you have a problem is the first step to recovery. The problem, of course, is what to serve for breakfast that is quick, easy, nutritious, and won’t make a mess in the car. Yes, it would be best to eat at the table, but let’s face it, vehicular meals are sometimes the only option. Plus, you agreed to not judge in the opening paragraph. Sure, I have the delicious PB&J Smoothie and the Pumpkin Power Bread in the arsenal; however, I felt like I needed something else to offer my ladies for breakfast.
Consequently, I put on my baking cap once again and came up with my version of APPLE PECAN BREAD. Just like it’s Pumpkin counterpart, this bread is low in fat and loaded with protein, fiber, vitamins, minerals, and Omega 3 fatty acids. Serve it with a dollop of peanut butter and you will be in breakfast heaven while navigating the carpool line. The kids will be well-fed. The car will stay clean. And you just might qualify for that parent of the year award.
Ingredients Instructions First of all, take the pecans, oats, chia & hemp seeds, and put them in a food processor. Pulse until they resemble a coarsely ground flour. We did this once in the Pumpkin Bread Recipe, and I grind it up because I like to hide nutritious stuff in the bread. Please believe me, I don’t advocate lying to children, but what they don’t know will be good for them. Next combine your flour, baking soda & powder, salt, spices, and sugar in a large bowl. Whisk to combine.
In a separate bowl, whisk together the flaxseed and warm water. Then whisk in the applesauce. Pour this wet mixture into your bowl with the dry ingredients. Add in your coarsely ground seeds and oats along with your grated apples and mix to combine. Don’t worry, but the batter will be very thick and dense. It will take about 2-3 minutes to thoroughly mix everything. Who knew you could get a workout in the kitchen?
Divide the batter evenly between two loaf pans coated with cooking spray. Bake the loaves in a preheated 325 degree oven for 40-50 minutes or until a toothpick inserted in the middle of each loaf comes out clean. Remove from the oven, remove the loaves from the pans, and cool on a wire rack for 20-30 minutes. This bread, too, freezes beautifully, so don’t be shy about making a double batch and tucking some away for next week.
Cut the bread into thick slices and warm it up in the toaster oven. Top with some peanut butter, breakfast is served. While the kids are getting their backpacks together and putting their shoes on, you have just made another amazingly delicious and nutritious breakfast. Save the toaster waffles for your next visit with the in-laws. Your mother-in-law will love them. I promise. Longer Letter Later.
