HAPPY MEMORIAL DAY
Today, we honor all those men and women in the armed services who gave their lives protecting our freedoms. Originally called Decoration Day, this day of remembrance was created during the Civil War to pay tribute to those who fell in battle. And while the actual summer solstice doesn’t happen until the end of June, most use this weekend to celebrate the beginning of summer. The beginning of summer means BBQ.
Yes, there is nothing better than a good BBQ filled with smoky saucy goodness. Unfortunately, most people think you need to spend hours outside, slow cooking some sort of animal product to achieve this deliciousness. However, I am here to tell you all you need is an oven and about 30 minutes. You don’t even have to go outside, but you will still need to drink some cold beer.
So, sit back and enjoy my latest delicious vegan recipe: Bob’s BBQ BOWL. It will surely satisfy. And while the oven preheats, I leave you with the immortal words of Emmitt Otter’s Jug Band:

Gluten Free / Nut Free / Oil Free
Ingredients
- 1 Lbs. Firm Tofu
- BBQ Sauce of Choice
- 15 Oz. Can of Baked Beans
- 2 Med. Sweet Potatoes
- 5-6 Cups of Baby Kale
- ½ Avocado
- 1 Tsp. Celery Seed
- ½ Tsp. Garlic Powder
- ½ Tsp. Onion Powder
- 2 Tbs. White Wine Vinegar
- 1 Tbs. Agave
- ½ Cup Water
- Salt and Pepper to your taste
Instructions
Preheat your oven to 425 degrees. Cut the tofu and sweet potatoes into half-inch cubes. Place the potatoes in a stockpot with enough cold water to cover. Bring the potatoes to a boil, cook two minutes, then drain off the water. Cover two cookie sheets with parchment paper or cooking spray, add your tofu to one and potatoes to another. Roast both for 25 minutes until golden brown.
While the tofu and potatoes cook, place the avocado, celery seed, garlic, onion, vinegar, agave, and water in a high speed blender or food processor. Blend until smooth and creamy. You might need to add a touch more water to get the right consistency (think yogurt). Pour the dressing and kale into a large mixing bowl. With your immaculately clean hands, massage the dressing into the kale leaves. Once the kale has been massaged, place the bowl in the frig.
Your tofu and potatoes should be cooked by now. Toss the tofu with the BBQ sauce in a small mixing bowl. Place it back in the oven for another 5-10 minutes. While the tofu bakes, open your can of beans and heat them in a saucepan over medium heat. When the beans and tofu are done, toss the sweet potatoes into the kale salad. Place a generous helping of the kale onto a plate. Top with the BBQ tofu and baked beans.
