Suffice it to say, most of my weekday mornings begin running a gauntlet of epic proportions. It is hard enough pulling myself out of bed, but throw in a child or two and the AM hours can be downright daunting. I rarely have enough time to make coffee, shower, get dressed, make lunches and eat breakfast. What is a parent supposed to do?? Well, I don’t have solutions for all the morning dilemmas; however, I can solve the breakfast issue.
Here is a simple yet nutritious way to start your day. While the coffee brews and the kids pack their book bags, you can whip up this quick breakfast idea. It is full of fiber, protein, vitamins, minerals and antioxidants. Plus it tastes awesome. So good in fact, if they don’t see what is in it, even the pickiest kids will want some of it. - 6 Pitted Dates
- 1 Ripe Banana
- 2 Tbs Natural Peanut Butter
- 2 Cups Frozen Blueberries
- 1 Cup Fresh Kale
- 2 Ribs of Celery
- 1 Green Apple
- 2 Cups Water

Okay, it is just this easy. Get out your blender. Peel your banana and chop up your apple. Throw all the ingredients in the blender and puree until smooth. Enjoy immediately or pour into an insulated container to drink while in carpool or on your way to work. It is just that simple. Oh and before I forget, you might be asking how nutritious can this smoothie actually be?

Bananas are a great source of potassium, B6, Vitamin C and Manganese. Peanut Butter is a good source of protein. Blueberries are classified as a “super food” full of antioxidants that promote cardio and nervous system health. Kale, also a “super food,” is full of fiber and Vitamins K, A, and C as well as a good source of copper, iron, and calcium. Celery contains Vitamin C, Beta Carotene, and Manganese and helps aid digestion. And apples are a good source of fiber and Vitamin C.
Now, I am no doctor or nutritionist, but my extensive research on the subject leads me to believe that this quick and easy breakfast treat is nothing more than “NUTRITION” in a glass or insulated container. And while this breakfast will not get your kids out of bed, or make them brush their teeth, or help them find their homework, or get them dressed before the bus arrives, it will give you a great start to your day.
