Ingredients
- Serves 2
- 2 Pita Bread Rounds
- 1 Cup Baba Ghanoush
- 10-12 Cherry Tomatoes (chopped)
- 1 Small Cucumber (chopped)
- ½ Med Red Bell Pepper (chopped)
- Recipe for Tzatziki Sauce
- Makes about 3 Cups
- 2 Large Eggplants (peeled and sliced thick)
- 1 Med Red Onion (peeled and sliced thick)
- Cooking Spray
- 2 Tbs Roasted Garlic
- ¼ Cup Tahini (sesame paste)
- 3 Tbs Fresh Parsley (minced)
- ½ Tsp Cumin Powder
- 1 Tsp Smoked Paprika
- ½ Tsp Liquid Smoke
- Juice from ½ a Lemon
- Salt and Pepper to your taste
Instructions
Preheat your oven to 425 degrees. While the oven heats, put your eggplant and onion slices on a cookie sheet coated with cooking spray. Roast the vegetables for 25 minutes or until they are browned nicely on the edges (a little charring won’t hurt). While the vegetables roast, make the Tzatziki sauce and chop your pizza toppings: tomatoes, cucumber, and red bell pepper.
When cool enough to handle, puree the eggplant, onion, and garlic in a food processor until you get the consistency of chunky applesauce. Place the eggplant mix in a bowl and add the tahini, parsley, cumin, paprika, liquid smoke, and lemon juice. Stir to combine and then adjust the taste to your liking with salt and pepper.
Top each pita round with about ½ cup of the Baba Ghanoush, then bake in the 425 degree oven for about 10-12 minutes or until the sauce is warmed and the edges of the pita are browned. Remove the pizzas from the oven, top with your chopped vegetables, and then drizzle the Tzatziki sauce over the entire pizza.
