The 1987 film Wall Street delves into greed, corruption, and the depravity sometimes found in corporate America. The story involves a young stockbroker willing to do anything to get ahead and have a taste of the good life. In one poignant scene, this taste of the good life can be boiled down to one single dish:
Bud Fox – “Nice to see you again Mr. Gekko.”
Gordon Gekko – “Try the steak tartare. It’s off the menu but Louis’ll make it for you…You do good, you get perks, all kinds of perks. Stay home tonight. Louis, take care of ‘im. Enjoy the lunch.”
And the lunch, of course, is a plate of raw, minced beef topped with a raw egg. It is hard to imagine raw meat being a perk, so to paraphrase Mr. Gekko:
“The point is, dear readers, that steak tartare, for lack of a better word is disgusting. Steak tartare is wrong, steak tartare is foul. Steak tartare, clogs up, and obstructs your arteries. Steak tartare, in all of its forms; tartare with raw eggs, with capers, with anchovies, with minced shallots has marked an upward surge in coronary disease. And steak tartare, you mark my words, will not only increase your cholesterol, but all that raw meat is sure to cause some GI distress as well. Thank you very much.”
The good life can’t be found in raw meat; however, it can be found in tartare…TOMATO TARTARE that is. And my latest recipe for TOMATO TARTARE is everything a future corporate raider could ask for in a dish. The best thing is that you don’t need to be an executive to enjoy it. You can make this dish in your own home and enjoy a taste of the good life. No power suits or ties required…
Oil-Free / Gluten-Free / Soy-Free / Nut-Free
Ingredients
- 6-8 Medium Tomatoes
- 1 Avocado
- 1 Tbs Fresh Parsley (minced)
- 1 Tbs Fresh Chives (minced)
- Salt and Pepper to your taste
- Basil Oil (optional)
Instructions
Okay this recipe is super easy. Preheat your oven to 250 degrees. Bring a large pot of water to a boil. Core your tomatoes and cut a small X in the bottom of each one. Place them in a bowl and cover them with the boiling water for 2-3 minutes. Drain the water and when the tomatoes are cool enough to handle peel off the skins. Cut the tomatoes, remove the seeds, and place them on a cookie sheet lined with parchment paper. Slow roast the tomatoes for one hour.
Once the tomatoes are done roasting, remove them from the oven and let cool. Then mince the tomatoes along with the avocado and herbs. Mix everything together in a small bowl and season to your taste with salt and pepper. No other ingredients are necessary as the flavor of the tomato really shines through after slow roasting them for so long.
You can arrange the tartare on a plate and serve with a green salad. Or you can be fancy and use a ring mold, biscuit cutter, or a piece of well cleaned PVC pipe to make a tower of tartare. Garnish with basil oil and your tartare is complete.
