Since the dawn of mankind, parents around the world have been telling their children to eat their vegetables. I am certain that the first cave mom (cave dad was out hunting with his primitive weapons), while watching her child eat a giant hunk of mastodon steak, said “maybe you should have some green beans to along with your meat? Let me go gather some for you.” Okay, it probably wasn’t green beans. Most likely our cave mom found some edible roots, berries, or leaves, but you get the picture. Kids need to eat their vegetables and go easy, if not forgo altogether, the filet of mastodon.
Times have changed. Now days, it is very likely that dad is home in the cave, and mom is out in the world doing the hunting. But getting children and adults to eat more vegetables is still key to proper nutrition. Unfortunately, accomplishing this feat can be just as difficult as bagging a wholly mammoth with a flint-tipped spear. Lucky for us, evolution has given us the high speed blender. And, I now give you my recipe for the VEGETABLE-FRUIT SMOOTHIE.
This treat is made with four different kinds of vegetables, four varieties of fruit, and some hemp seed thrown in for excellent protein and Omega 3 & 6 action. Not to mention, there are tons of anti-oxidants, vitamins, minerals, folates, and fiber. The sweetness of the fruit masks the flavor of the vegetables, so even the pickiest eater will ask for seconds. So, put away your spears and rudimentary weapons. Toss out the prehistoric slabs of meat, and fire up the blender. Everyone in your cave will be happy. I promise. If not, you can always go foraging for some edible roots.
Ingredients Instructions Breakfast or snack time is just this easy. Just throw all the above ingredients into a blender and puree until smooth and creamy. Pour into a glass and enjoy. You can also add a handful of kale or spinach if you are feeling adventurous. However, these leaves will turn the smoothie green and some kids, mine in particular, won’t touch this once it changes colors, regardless of the flavor.
Also, I used baby varieties of most of the vegetables because my kids think they are cute and are more willing to eat them. If you can’t find or don’t have baby beets, zucchini, or tomatoes, just use the adult varieties. In that case, I would use half a regular zucchini, one medium tomato, and half a regular beet. Finally, I used frozen figs because I found them at my local Trader Joe’s. If you can’t find frozen, fresh works just as well and they will soon be in season. If you can’t find figs at all, just double up on the strawberries.
So as you sip your morning beverage of choice, revel in the fact that you just fed your family four different kinds of vegetables before 8:00am. You didn’t even have to stoke the fire to whip up breakfast. You didn’t even have to leave the cave to go hunting for the morning meal. Best of all…this quick, delicious, nutritious breakfast will give you a few extra minutes in the morning. So, roll over and pull the mammoth fur back over your head. Better yet, nudge your partner and let them get breakfast ready. Longer Letter Later.
