Well folks, the time has come to put back on the old cape and hat and pull out the magic wand. Why? First, wearing a cape and hat is cool…as long as no one is looking or passing judgment. Second, magic wands are even cooler…trust me on this one. Third, we are going to harness our magical powers and turn walnuts into taco meat. Yes, you heard me right. Now turn down your 80’s hair band music and listen up.
We have already turned tofu into scallops, grain into meat, cashews into cheese, and beans into tuna. Consequently, you have the powers inside you. You just need to focus. I think America said it best in their 1982 smash hit with “You can do magic, you can have anything that you desire, Magic, and you know you’re the one who can put out the fire. You know darn well, when you cast your spell you will get your way …” You Can Do Magic.
So, we are going to cast a spell and get you what you want: a healthy alternative to taco meat. Okay, I’ll admit we won’t actually be using magic. True magic is only reserved for trained professionals or when you assume the role of a wizard or cleric in a rousing game of Dungeons & Dragons. However, we will use the food processor and transform the ordinary walnut into a savory filling for a tortilla or a delicious topping for a salad. Yes, here is my version of WALNUT TACOS.
This recipe comes together quickly with most of the work coming from garnish prep. Therefore, it is great for a quick lunch or a light supper when you have been busy working all day. Plus you get to put on your cape. No one is watching, and I don’t judge. I told you it was cool.
Ingredients
- 8 oz. Walnuts
- 1 Tabs Nutritional Yeast
- 1 Tsp Chili Powder
- ½ Tsp Ground Cumin
- ½ Tsp Smoked Paprika
- ½ Tsp Garlic Powder
- ½ Tsp Onion Powder
- ½ Tsp Oregano
- 2 Tabs Lime Juice
- Salt & Pepper to your taste
Instructions
Okay, place all the ingredients in a food processor, pulse several times until the walnuts resemble finely ground meat. Then quicker than you can say “ABRACADABRA” you have taco meat made from nuts. It was just that easy. Now, season to your taste with salt and pepper and you are ready to eat. Add to tortillas topped with fresh lettuce, tomatoes, and guacamole; or, you can make a salad with lettuce, tomatoes, corn, peppers, and cilantro. Either way, life is good.
