Unfortunately dear readers, my newest recipe may have some of you immediately turning up your nose and pressing the back button on your web browser. Most kids hate the main ingredient in this awesome vegan dish. Heck, I would venture to say that most adults hate the main ingredient in this dish. However, PEAS are awesome. Yes, you heard me right… PEAS are awesome. Now, I am not talking about the little army green pebbles found in a can of high sodium liquid. I am talking about fresh peas readily available this time of year.
Fresh peas are sweet with a slight starchy texture. Plus they are a nutritional powerhouse. They are full of anti-oxidants and anti-inflammatories complete with phytonutrients that may help prevent stomach cancers. In addition, they are chock full of omega 3 and omega 6 fatty acids, fiber, manganese, vitamins B1 & C, zinc, copper, and iron. Peas are a good source of protein and are environmentally friendly. Seems pea plants add nitrogen back into the soil and help prevent soil erosion. So stop being a baby and eat your peas.
But if you are still dubious and an extreme pea hater, then try out my recipe for GREEN PEA DIP. This dish allows you to have your peas and eat them too. Pureed along with some white beans and a few other ingredients, you will be able to transform the humble pea into a velvety smooth dip that goes great on a cracker or smeared on flatbread. Just trust me on this one, you won’t be sorry.
Ingredients
- 10 oz Fresh Green Peas
- ½ Red Onion (chopped)
- 2-4 Cloves of Garlic (chopped)
- 2 Cups Vegetable Broth
- 15 oz Can of Cannellini Beans
- ½ Tsp Smoked Paprika
- ½ Tsp Dried Rosemary
- Salt & Pepper to your taste
Instructions
In a sauce pan over medium heat, add your broth, onions, and garlic. Simmer for 3-5 minutes or until the onions are soft. Now add in your beans (rinsed & drained) and simmer for another 5-10 minutes or until half of the liquid has evaporated. Now add in your fresh peas and simmer another 3-5 minutes or until the peas are soft and most of the liquid has evaporated.
Place the pea mixture into a food processor. Add in your paprika and rosemary, and puree until the peas and beans are nice and smooth. You may need to scrape down the sides of your processor to incorporate all of the peas. Season to your taste with salt and pepper and serve with crackers, pita chips or use as a sandwich spread.
