I’ll be the first to admit that I am not a huge sports fan. Sure, I catch a handful of college football games on occasion; but, I am not in any sort of fantasy league nor do I have any game day sports packages with my television provider. It is just not my thing. However, I do love watching the college football championship and super bowl each year. Twice a year, I watch football and eat snacks. You know, food you can pick up with your fingers, no utensils required.
And, the big game is this weekend. That’s right. The Super Bowl will be on Sunday night. I don’t have a favorite team. I don’t know exactly what is “super” about the whole thing (other than the commercials and possible halftime show incidents). I don’t know why the winners are crowned “World Champions” without defeating teams from other countries. All I know is that I get a chance to make an entire dinner out of appetizers.
I can’t really describe why I enjoy a dinner made of nothing but snacks. Maybe it stems from a childhood memory buried deep in my subconscious. Maybe it is just the complex fabric that makes up my cosmic identity. Or maybe it is just a great excuse to eat with my hands. Whatever the reason, here is my version of GAMEDAY NACHOS. This recipe is fairly simple to pull together. It can be shared with many, giving everyone a little taste of vegan goodness, or you can share it with your spouse and have enough for a full meal. You decide. Meanwhile, get cozy on the couch, grab a cold beer, and sit back and enjoy the big game with a platter full of snacks.
Ingredients Instructions Place the soy crumbles, tomato sauce, and water (or beer) in a skillet over medium heat. Add in the chili powder, onion, garlic, oregano, cumin, and liquid smoke. Bring this mix to a boil, then reduce the heat to a simmer. Cook the crumbles until most of the liquid has evaporated.
** If you don’t want to use soy crumbles because many of them are heavily processed, you can use tofu in this recipe. I would suggest that you shred the tofu with a box grater to get a nice crumbled consistency.
While the soy crumbles cook, whisk together the ingredients for the avocado dressing. Then spread the tortilla chips out on a large platter. Top with the hot crumbles, then the beans, then the corn, then the lettuce and tomato, and finish with a healthy drizzle of the avocado dressing and a sprinkle of fresh cilantro.
“Snack-time” or should I say “Game-time” is ready and waiting. Regardless of who wins, I am certain you will enjoy this tasty snack. So kick back enjoy the game, the commercials, the half-time show, and a platter full of nachos. Just make sure you wash your hands first. Longer Letter Later.
