My soliloquy was inspired by the folks at Thug Kitchen and Real Food Honestly. After seeing their Caesar Salad recipes, I set out to craft a salad that employed healthier greens topped with a vegan dressing made without oil, was gluten-free and nut-free. Thus, I doth give you my vegan version of the KALE CAESAR SALAD. It is delicious and comes together in a snap. All you need is a blender and a handful of ingredients… the Roman Toga and Laurel Wreath Headband are optional…just be aware of the Ides of March.
Oil-Free / Nut-Free / Gluten-Free
Ingredients
- 6 Cups Kale (washed)
- 1 Small Avocado
- 4 Tsp Rice Vinegar
- 4 Tsp Dijon Mustard
- 2-3 Garlic Cloves
- 2 Tbs Capers
- 1 Tbs Nutritional Yeast
- 1/2 Tsp Kelp Powder (optional)
- 1/2 Cup Water
- Red Onion (optional)
- Tomatoes (optional)
- Rice Parmesan (optional)
Instructions
Using a high speed blender, puree the avocado, vinegar, Dijon, garlic, capers, yeast, kelp, and water until smooth and creamy. You might need to add a touch more water to thin out the dressing.
In a large mixing bowl, add the dressing to the kale and gently massage the dressing into the kale. This helps tenderize the kale and ensure all the leaves are well coated. Place the bowl in the frig and let the greens get cold (about 30 minutes).
Now serve the greens on a plate, sprinkle with rice parmesan, and garnish with thinly sliced red onion and tomatoes. You can also add some faux grilled chicken or roasted tofu to make it an entrée salad.
